what's the last thing you ate? That would be last night’s after dinner snack, A Scharffenburger 1 oz semi-sweet chocolate bar, which might explain my headache.
what's your favorite cheese? That’s an evil thing, making a man pick a cheese like that. Parmesiano Reggiano.
what's your favorite fish? Native Brook Trout, followed closely by Salmon
what's your favorite fruit? I like a good nectarine, when they are ripe and perfect, which I believe is “Durin’s Day, when the thrush knocks, and the last rays of the dying sun pierce the gloom of Mirkwood.”
when, if ever, did you start liking olives? After I met mystery I began to eat more than just the blandest olives. I had only been exposed to those and Kalamata olives prior to that, so I thought all olives were too strong, or weak little affairs. After I met mystery she introduced me to some of the wide spectrum of olive tastes.
when, if ever, did you start liking beer? Gary Hardy gave me a Henry Weinhardts, probably in 1990 or 1991. Prior to that, I thought beer had to be Budweiser, and why would anyone drink that? I still don’t “like” beer that much, but I now realize that beer can be tasty.
when, if ever, did you start liking shellfish? 1988. I had all these great gumbos in Bilouxi Mississippi. I don’t think I’d ever had shellfish prior to that.
what was the best thing your mum/dad/guardian used to make? Chicken and Dumplings
what's the native specialty of your home town? Ramps and Beans with Venison.

what's your favorite type of chocolate? “Favorite” and “Chocolate” are synonyms. Urm, maybe I’ll add “within reach”
how do you like your burger? I have never liked hamburgers, ever. Why waste your time, if you are going to eat beef, eat a steak.
how do you like your eggs? I’m not a big breakfast man, but a fried egg over rice with kimche and soy sauce is a good thing.
how do you like your potatoes? I’m not that partial to htem, but I guess mashed is best.
how do you take your coffee? Espresso, two shots, a cup of milk, and often
how do you take your tea? Preferably as Chai Masala, but if you mean English Tea, then this is a science, and can not be compromised. 1) dar jeeling or other high quality leaf. 2) as close to whole leaf as possible, 3) freshly drawn, cold water, 4) take the kettle to the pot 5) steep for no more, no less, than five minutes. 6) add whole milk at the end. 7) and one sugar.
what's your favorite mug? A small mug made by one of the pottery grad students I knew at the UW.
what's your biscuit or cookie of choice? Chocolate chip.
what's your ideal breakfast? Personally, I like to wait till lunch.
what's your ideal sandwich? I make this type of thing a lot. Red Pepper, tomato, basil, artichoke hearts, mayo, mustard and peanut butter on a good focaccia.
what's your ideal pizza? I miss some of the seasonal pizzas served by Pagliacci in seattle. The potato primo, the asparagus primo, etc.
what's your ideal pie? Some of the natural pecan pie recipes that use maple syrup and molasses in place of Karo Syrups light and dark, are simply fantastic. Of course, you need some home made vanilla ice cream with that.
what's your ideal salad? Baby greens, olive oil, red wine vinegar, and mustard in a vinegrette, mozarella and fresh heirloom tomato… you can throw some sugar snap peas in there if you like. Mmmm.
what food do you always like to have in the fridge? Parmesian, Yogurt, Relish, Tofu, soft drinks, eggs, yeast, miso, roasted red pepper, milk. If I’m being decadent, sour cream or crème fresche, cream cheese.
what food do you always like to have in the freezer? I keep a s(t)ock bag. That is essential. Save the tops of onions, the stems of greens, mushrooms, etc. this gets boiled to make stocks for soup.

what food do you always like to have in the cupboard? Olive oil, Olives, pasta, tomatoes, pinto beans, cannelini beans, artichoke hearts, red wine vinegar, apple cider vinegar, basalmic vinegar, sherry, sugar, salt, flour, etc.
what spices can you not live without? I prefer a wide variety, but I can make do without any one at any given time.
what sauces can you not live without? I rarely use commercial sauces, but sometimes I use Worchestershire Sauce. Oh wait, Mayonaise!
how often do you go food shopping? Once a week.
what's the most expensive piece of kitchen equipment you own? That’s hard to say… probably the pasta maker, if not that, then the Kitchen Aide Blender.
what's the last piece of equipment you bought for your kitchen? A mandolin (which I’ve yet to use, by the by.)
what piece of kitchen equipment could you not live without? I have to side with
[personal profile] dagoski and say, a knife.
how many times a week/month do you cook from raw ingredients? Ten, and that’s cut WAY back, since I’m limited to my days off.
what's the last thing you cooked from raw ingredients? Roasted Beets in Basalmic Vinegar, Red Wine, and Worchestershire, with Tofu-Potato Salad.
what meats have you eaten besides cow, pig and poultry? Venison, Rabbit, Duck, Bear, Raccoon, Rattlesnake, (probably Dog, it was expensive enough,) Squirrell, Lamb, Game Hen, all kinds of other stuff.
what's the last time you ate something that had fallen on the floor? Last Wednesday.
what's the last time you ate something you'd picked in the wild? A year ago, we picked blackberries and made a miserable cobbler.

Seattle:
1) valentine’s day at Carmelita, squash sage ravioli in a yellow pepper sauce.
2) Breakfast at Café Flora: marscapone and pistacio stuffed french toast
3) The B & O Espresso, Double Tall Milky Way (Doubleshot of espresso with homemade caramel crème and shaved Valrona Dark Chocolate.)
what's your choice of tipple at the end of a long day? Chocolate milk
what's the next thing you'll eat? Probably a Chaat from Rajbhog
